Breakfast Taco

Ingredients
3 6in corn tortillas2 large eggs1 tsp 2% milk1 Breakfast Sausage link, cooked and chopped.1 jalapeņo pepperOnion, raw, choppedMexican style cheese of choiceSeasonings to desiring (I use Cumin and chili powder, but you could use regular taco seasoning if you like, or a spice with a kick like Tony Cacherie's)
Directions
-Heat a non-stick frying pan under medium-high heat.
-As the pan heats, chop onion and pepper.
-Heat tortillas on the frying pan
-While the tortillas are heating, combine eggs and milk, mix well.
-Add the sausage, onion and pepper to the pan, allow to cook for two minutes.
-Add the eggs/milk to the pan, scrambling the eggs as they cook. Add seasoning.
-After the eggs are cooked, place 1/3 of the mixture in each tortilla, sprinkle with cheese. Allow 1 minute for the cheese to melt slightly. Serve warm. Makes three breakfast tacos.
