Milanesa (Once a month cooking option)

Ingredients
1 lb round steak2 eggs2 Tbsp Red wine vinegar1 1/2 tsp chopped garlic1 Tbsp parsleysalt to taste1 cup Italian-seasoned breadcrumbs* 1 lemon
Directions
Pound the steak until very thin. Whisk together all the ingredients except the breadcrumbs and the lemon and pour into a labeled 1 gallon freezer bag with the steak. (Put dry breadcrumbs in a sandwich bag to attach to the steak in the freezer.) Let steak marinade for a few hours or put in freezer.

(Thaw steak if needed) Discard marinade. Dredge the steak in the breadcrumbs. Place into a 8x8 inch baking dish prepared with nonstick spray. Bake at 350 degrees for about 15 minutes. Serve with lemon slices.
