1 Tbsp. butter 1 cup fresh baby spinach1/4 cup sun-dried tomatoes-not in oil1/2 cup sliced black olives2 large eggs1/2 cup cheese
Makes one generous serving.
I put 1 Tbsp. butter in a moderate sized frying pan, add spinach, sun-dried tomatoes, and sliced black olives, and cook until spinach is done. I scramble 2 Large eggs and mix with vegetables and then sprinkle with the cheese, (I use Mexican three cheese variety but any meltable cheese would be fine.) Serve and eat up!
