Black Bean and Corn Salad 1/3 C lime juice1/2 C olive oil1 clove garlic, minced1 t salt1/8 t ground cayenne pepper (a little more?)2 (15 oz.) cans black beans, rinsed and drained1 1/2 C frozen corn kernels (rinse with cold water and let drain)1 avocado - peeled, pitted and diced (Make sure that it's ripe! Add last.)1 red bell pepper, chopped2 tomatoes, chopped (I like the grape tomatoes cut in half.)6 green onions, thinly sliced1/2 C chopped fresh cilantro 1. Place lime juice, olive oil, garlic, salt and cayenne in a small jar. Cover and shake until well combined. 2. Combine beans, corn, avocado, bell pepper, tomatoes, green onoins and cilantro. Shake dressing. Pour over salad and stir gently until everything is coated.
