Salmon Stuffed with Blue Cheese, Pear and White Wine

4 frozen skinless fillets of salmon1 tsp olive oil/butter combo1 medium onion, chopped2 cloves garlic, pressed1 large or 2 small pears, peeled and diced1/2 cup white wine1/4 cup maple syrup1 tsp dillsprinkle of sageonion powder, salt and freshly ground pepper to taste1/2 cup bread crumbs20 gm Canadian Blue cheese, sliced
Preheat oven to 375°F.
In a skillet over medium-high heat, saute onion and garlic. Add pears, wine, maple syrup, dill and sage. Season generously and let simmer 5 minutes.
Remove from heat and add bread to absorb liquid. Drain excess liquid to pour over stuffed salmon.
On a parchment paper covered cookie sheet, set 2 salmon filets. Garnish with pear preparation, then add Blue cheese.
Top with another salmon fillet, pour excess mixture liquid over the fillets, cover with a foil "tent" and bake 15 minutes. Remove the foil. Bake for an additional 15 minutes. Cut each in half and serve.
Servings: 4
Variation: for a milder taste, try with Canadian Aged Gouda, Mild or Aged Cheddar or slices of Brie.
Tip: Recipe can be prepared in advance and baked at the last minute.
