Zucchini Quinoa Lasagna

Ingredients
Zucchini, baby, 2 large (remove)*365 Organic Quinoa, 1 cup (remove)Vegetable Broth, 2 cup (remove)Tomato Sauce, .5 cup (remove)Onions, raw, .25 cup, chopped (remove)Oregano, ground, 1 tsp (remove)Basil, 1 tbsp (remove)Parsley, dried, 1 tbsp (remove)Ricotta Cheese, part skim milk, .25 cup (remove)*Trader Joe's Tomato Basil Marinara, 2 cup (remove)*Cheese, Shredded, Trader Joe's Mexican Blend, .5 cup (remove)
Directions
1. preheat oven to 400F

2. thinly slice zucchini into long "noodles"

3. sprinkle zucchini with salt and let moisture absorb between paper towels.

4. in pot combine quinoa, broth, onion, tomato sauce, and oregano and simmer for 20 minutes

5. add ricotta and herbs to quinoa mixture

6. poor 1/3 cup marinara on bottom of baking pan and layer first layer of zucchini (4 noodles)

7. Top with 1/2 quinoa mixture and then 1/3 cup sauce, then 4 zucchini noodles, rest of quinoa, 1/3 cup sauce, and then zucchini, remaining marinara sauce, and 1/2 cup of shredded cheese

8. Bake in oven for 30 minutes

9. Enjoy! Serves 4-6 (Nutritional Info based off of 4 servings!)
