2 large potatoes of choice3/4 Cup silk plain unsweetened soy milk2 Tbst Earth's Balance Whipped soy butter spread1/2 tsp. Salt (optional)
Mashed potatoes for the dairy restricted individuals.
1/2 Cup serving equals one serving.
Wash favorite potatoes. Slice with peelings on 1/2 to 1 inch thick. Place in pan in water covering potatoes and bring to a hard boil. Boil until tender when tested with a fork. Drain potatoes.
Add silk soy milk and Earth's balance soy butter substitute & salt (optional).
Blend with mixer unti smooth and creamy.
