Whole Wheat Waffle with Banana Berry Topping

Ingredients
Whole Wheat Flour, 1 cupEgg, fresh, 1 large separatedStevia .5 tspCanola Oil, .5 1tsp Milk, nonfat, 1 cup No Fat Greek Yogurt .25 cupFrozen Mixed Berries, .75 cup Cranberry juice cocktail .2 cup Banana, fresh, 2.5 medium (7" to 7-7/8" long). SlicedVanilla 1 tspSalt 1 tspBaking Powder 1 tsp
Directions
In a bowl whisk egg white until stiff
In a separate bowl mix flour baking powder, flour, stevia, salt.
Add egg, mik, and vanilla to flour mixture
Fold in whisked egg
Place about .5 cup of batter into waffle maker (I have a BIG eound maker so I only end up making 2.5 huge waffles which I split in half to make a total of 5 serving of 2 pieces each - see picture)
While the waffles are cooking, in a blender or food processor add .25 cup of yogurt with .74 cup of frozen berries (you can sue fresh if you dont want a frothy topping). Add the cranberry juice and lemon juice if you want. I used a little bit of sweet lemon juice.
Take the waffles and split in 5 servings. Top each waffle with 2 tsp of yogurt mixture and half a sliced banana.
You may add half a teaspon of shredded unsweetened coconut to the waffles (not included in calorie count)

VOILA!
