Mashed Caulifower and Cheese

Ingredients
1 lg. head cauliflower, finely chopped1 c. chicken stock1 head roasted garlicSalt & pepper1/4 c. milk (we used 1%)1 c. shredded cheddar
Directions
Wrap head of unpeeled garlic loosely in tinfoil with top open; drizzle with olive oil. Roast at 350 for 30 minutes. Pop cloves out by gently squashing.

Add cauliflower and stock to medium saucepan. Bring to simmer over medium-high and cook til tender, about 8-10 minutes. Add roasted garlic and season to taste with salt and pepper. Stir in milk and puree with immersion blender til smooth. Mix in cheese and taste for more seasoning.

We put it back in the oven at 350 for 40 more minutes, to brown on top.

    I didn't know Ruby Tuesdays had it, but I'm addicted to it. Good thing it isn't worse in calorie count! Hope you enjoy it.
