Baked Fish and Chips

Ingredients
2 large baking potatoes1/4 cup Kraft Light Done Right Zesty Italian Reduced Fat Dressing1 pkt Shake N Bake Extra Crispy Coating mix, divided.1 lb white fish fillets, such as haddock, halibut or cod1/2 cup Miracle Whip Light Dressing
Directions
Preheat oven to 400F. Cut each potato lengthwise into 8 wedges; place in large bowl. Add italian dressing;toss to coat. Arrange on baking sheet sprayed with cooking spray. Bake 20 min.
Meanwhile, spread remaining coating mix onto large plate. Spread tops of fish fillets evenly with half of the Miracle Whip, press, dressing-sides down, into coating mix on plate. Repeat with remaining Miracle Whip and coating mix on plate to coat remaining sides of fish fillets. Place on broiler pan.
Bake potatoes and fish 15 min. or until fish flakes easily with fork and potatoes are tender.

    This was good. I didn't use the Italian dressing and I used light mayo instead of Miracle Whip. The fish doesn't reheat well, but that may just be my unfamiliarity with fish. - 2/14/09
