Beef Mushroom Barley Soup

Ingredients
1 cup Raw Pearl Barley1 medium onion, finely chopped11 cups Blue Menu No Salt Beef Broth2 lbs of sliced fresh mushrooms2 cloves roasted garlic160 grams of sliced baby carrotsFresh Thyme - 1 tspFreshly grated pepper to taste
Directions
Trim beef and cut into small cubes
Brown and set aside.

Slice and brown mushrooms
Finely chop onion and brown,

Combine all ingredients with stock.

Simmer for 45 min until barley is tender.

Makes 8 servings - each with 1oz of beef (beef has now "lost weight" as it's cooked, 1 cup barley/mushroom/carrot mixture, and 1 cup broth
