Dijon Beets and Greens

Ingredients
1 bunch of fresh beets with greens and stems2 tbsp dijon or other mustard1 tsp butter6 tbsp water
Directions
Chop beet greens and stems. Peel and chop beets into 1 inch pieces.

Bring water to a boil. Add chopped beets , cover and cook until partly tender, 6-7 minutes on medium-high heat. Place greens and stems on top of beets, recover and cook for about 5 minutes more, adding water if needed.

Remove from heat. Toss with dijon, butter, salt and pepper to taste. Serve warm or cold.
