Spicy Buffalo Chicken Salad Sandwich

Ingredients
4 half chicken breasts-cooked (leftover sticky chicken works great)6 Tbsp light myonnaise2 Tbsp Kraft Light Done RIght Salad Dressing, Roka Blue1 c. shredded iceberg lettuce1 stalk celery, finely diced2 tsp. hot pepper sauce like tobasco (more or less according to taste)1/8 tsp. chili powderdash onion powderdash - 1/8 tsp. cayenne (to taste)8 slices whole wheat breadoptional- sliced red tomato
Directions
Shred or chop chicken breasts. Set aside.
Mix mayonnaise, seasonings and hot pepper sauce.
Combine chicken, celery and seasoned mayonnaise.
Divide chicken mixture evenly and spread onto four slices of bread.
Top chicken with 1/4 c. shredded lettuce.
(add tomato if desired)
Spread remaining four slices of bread with 1 1/2 tsp. of blue cheese dressing each. Top chicken and lettuce.
Enjoy.
Makes 4 sandwiches

To cut calories even more, serve chicken salad in lettuce cups wraps instead of bread. This cuts 256 from each serving.
