Tomato Gorgonzola Salad

Ingredients
2 large, (preferrably vine ripened) tomatoes1 tsp dried basil or 1 Tbsp fresh basil, finely chopped1 Tbsp extra virgin olive oil1/8 c. gorgonzola or blue cheese, crumbled
Directions
Slice tomatoes into thick wedges, approximately 8-10 wedges each tomato.
Place tomatoes in a serving dish. Drizzle with olive oil. Sprinkle with basil and gorgonzola.
Finely shaved pancetta or crumbled bacon can be added. Please note, these calories have not been calculated.

Each serving is approximately one very full half cup of tomato, about 1 tsp. of crumbled cheese,
1/4 tbsp olive oil and a 1/4 tsp. dried basil.
