.5 lb macaroni3 tbs unsalted butter3 tbs flour, white1 tbs ground mustard1/2 cup chopped onion3 cups milk 2%1/2 tsp paprika1 Bay leaf1 egg, lg2 cups shredded chedder cheese 2 %salt to tastepepper to taste3 tbs unsalted butter1 cup Panko bread crumbs
preheat oven 350 degrees
Boil macaroni according to package directions for Al Dente
In a lg sauce pan melt butter, add flour and mustard and wisk constantly over med heat for 5 min. do not let brown.
add milk, onion, paprika and bay leaf and cook 10 min stir frequently. sauce will thicken.
remove bay leaf
turn off heat, temper in egg, add 2/3 of cheese, salt and pepper incorperate completely. Fold in Macaroni
put in oven safe baking dish coated with non stick cooking spray
melt butter add panko to butter and coat thoroughly
top macaroni with remaining cheese, breadcrumb mixture , and bake at 350 degrees for 30 min.
let rest 5 min and serve
makes approx. 10 -1 cup servings
