Stuffed Green Pepper Soup

Ingredients
2-3 green bell peppers, seeds removed and chopped1/2 large onion, chopped2 14-oz. cans reduced sodium diced tomatoes3 cans reduced sodium beef broth2 cups cooked brown rice1 lb. lean ground beef, browned and drained.1/2 tsp. black pepper1 tsp. saltOther spices as your taste dictates: basil, rosemary, etc.
Directions
Brown ground beef and drain. Chop pepper and onions, place into a large soup pot. Add ground beef and all remaining ingredients except rice. Simmer for approx. 20 minutes or until onion and pepper are starting to soften. Add rice, simmer 10-15 minutes longer. Makes 6 servings of 330 calories each or 8 servings of 248 calories each. Nutritional info is figured for 8 servings.
