Vegan Chocolate Chocolate Chip Cupcakes

Ingredients
1 1/2 c flour1 c organic unbleached sugar2 T cocoa1 t baking powder1 t baking soda1/2 t salt1/4 c oil1 t vanilla1 T vinegar1 c water, warm1/2 c non-dairy chocolate chips
Directions
Preheat oven to 400 degrees.
In a bowl, combine flour, organic unbleached sugar, cocoa, baking powder, baking soda, and salt.
Make a well in the center.
Add oil, vanilla, vinegar, and warm water.
Stir just until moist.
Add chocolate chips.
Spoon batter into prepared muffin tin (use cupcake papers), filling 3/4 full.
Bake for 15 – 20 minutes.
