Penne with Fresh Tomatoes & Asparagus

Ingredients
3 tbsp olive oil2 cloves garlic, minced3 tbsp fresh basil, minced3 large, ripe tomatoes (or a pint of cherry or grape tomatoes), chopped1 bunch thin asparagus, cut into 1-inch pieces1/2 cup white winesalt, pepper, red pepper to taste6-8 oz penne
Directions
Boil water for pasta. While waiting, prepare the ingredients (washing, chopping, etc.). When pasta is boiling, heat olive oil in large sauce pan over med. heat. Saute garlic for about 30 seconds. Add wine and reduce for about 5 minutes. Add tomatoes, asparagus, and basil and saute about 5 minutes more. Drain pasta and add to sauce. Stir well. Add salt, pepper, and red pepper (if desired) to taste. Serve with Romano spinkled on top.

    Ok, This is is pretty good. I think some of the things I would alter is to add the tomatoes and basil at the end, I didn't get much basil flavor and I was pretty sad about that. I also felt that the tomatoes cooked down too much to really get any flavor. Other than that it was great! Good flavor! - 3/3/11

    OH. MY. Goodness. This is SO good! I substituted chicken broth for the white wine, since I didn't have any. I also used Ronzoni High Fiber pasta, so my fiber count would be higher.

    I will absolutely be making this again before asparagus is out of season! - 5/24/09
