1/2 cup of chopped scallions (small green onions)1 cup dlced celery1 tbsp canola oil1 cup frozen peas1 cup fresh mushrooms1/2 cup grated carrots2 cups cooked chicken 6 cups cooked and cold white rice (may use brown rice)6 tbsp La Choy soy sauce
-In a wok add canola oil, scallions and celery, saute til tender but not mushy
-add chicken, carrots, peas, mushrooms
-heat til chicken is warmed
-add cooked cold rice, stir to combine
-add soy sauce to taste, about 6 tbsp
