Vegetable Lasagne

Ingredients
Heat olive oil in a pot. Add all veggies and seasonings except zuchinni. Saute until soft, add tomatoes turn heat to low and simmer about 15 minutes. In a separate bowl combine ricotta cheese, half of the parmasan, and the egg. Slice zuchinni into 1/4 inch slices. Spray the inside of a 9x9 baking dish and coat with sauce. Layer pasta noodles, cheese, zuchinni, pasta, and sauce 3 layers. Top with mozzerella cheese and remaining parmasan. Cover and bake at 350 for 45 minutes. Uncover and bake an additional 15 minutes. Allow to stand at room temp for approx 15 minutes and enjoy!**If you opt not to cook your pasta before baking add 1/2 cup of water to the sauce.
