Cauliflower Casserole

Ingredients
1 medium head of cauliflower1 can 98% fat free condensed cream of mushroom soup2 eggs1 C shredded cheddar cheese1/2 C reduced fat mayo such as Hellman's Light8 Whole Wheat butter crackers such as Ritz2 T butter, meltedsalt and pepper to taste
Directions
Steam cauliflower. In casserole dish, combine cauliflower, soup. eggs, cheese, mayo, salt and pepper. Mix well. Crumble crackers over the top. Pour butter over the crackers.

Bake at 350 for 40 minutes.

Makes approximately 10, 1/2 C portions.
