Yam Coconut pudding

Ingredients
1 large garnet yam2 cans light coconut milk
Directions
Grate one large garnet yam or place in food processor. Place yam in skillet and Cover yam with just enough coconut milk to cover the yam. Bring to a boil then reduce heat but continue to boil stirring constantly until mixture thickens. Place 3/4 cup into 6 dessert dishes. May eat hot or cold.
