Salmon Cakes

Ingredients
1 can Pink Salmon (14.75 oz)1 large egg1/4 cup minced onion1/4 cup minced green pepper or celery (optional)2 TBSP coconut oil for fryingsalt & pepper
Directions
Mix the salmon, egg, onion salt and pepper. Shape into 8 small patties. Heat the oil in a large skillet and fry the patties until brown on both sides.

*A nice sauce for this is mixing 1 TBSP mayonnaise with 1-2 tsp dijon mustard. Add a little dill or horseradish if desired.
