"Rice Diet" Tomato Sauce

Ingredients
2 small (1 large) onion, chopped1T garlic2 (14.5oz) cans diced tomatoes, no salt added1 (6oz) can tomato paste1/2 C dry white wine (I use chardonnay)2t oreganored pepper flakes, to taste (I use 2 shakes)
Directions
Makes 6 1/2C servings

1. Spray a medium saucepan with EVOO and saute onion for 5 min. Add garlic and saute 1 min more.
2. Add tomatoes, paste, wine, oregano and red pepper, then simmer with the lid off for at least 1 hour. Use the lid if the sauce becomes thick enough to splatter.

Some sugar or honey may be added if the tomatoes are too tart after 1 hr. (not included in nutritional analysis)
