curacao sauce

Ingredients
normally:2 lbs red snapper½ C. lime juice2-3 finely chopped scallions1 minced garlic clovesalt and pepper¼ C. butterFlour, seasoned with salt and pepper1 large chopped onion1 medium chopped green pepper2 minced garlic cloves2 large chopped tomatoessalt and pepper1 Tbl tomato paste
Directions
Marinate the fish in lime juice, scallions, garlic, salt and pepper. Set aside for 2 hours
Cut the snapper into serving pieces
Dredge in flour
Fry in oil until nicely brown and crisp
Place in a baking pan and keep warm in the oven

In fish drippings, sauté the onion until transparent. Add he green pepper and garlic and fry for 5 minutes. Add the tomatoes, salt, pepper, and paste and simmer for 15 minutes. The creole sauce should be thick. Before serving, add the red snapper to the sauce and heat thoroughly
