200g Rolled oats70g pumpkin seeds50g flaked Almonds50g desiccated coconut2 tsp vanilla extracts160g honey2 tbsp apple juice1 tbsp cinnamon1 tsp ground allspice100g chopped dried apricots.
Serves about 8 as a topping, 4 as a cereal.
1) Preheat the oven to 180C/350F/Gas Mark 4 and oil a large baking tray.
2) Combine in a large mixing bowl the oats, pumpkin seeds, almonds and desiccated coconut. In a seperate bowl, mix all the wet ingredients and spices. Combine the dry and wet ingredients.
3) Spread the mixture out onto the baking tray using a spatula to press it down. Bake for about 40 mins, but keep an eye on it.When it starts to brown, turn it over to make sure it toast evenly on both sides
