Homecooked Beef Madras

Frylight spray oil2 medium onions, chopped550g beef casserole steak, cubed3 tblsp Madras curry powder2 x 400g tins chopped tomatoes1 beef stock cube1 tblsp black onion (nigella) seeds2 tsp garlic granules (or powder)1 tsp crushed dried chillis (optional)4 fresh tomatoes, roughly chopped5 mushrooms, sliced1 fresh green chilli, finely sliced (optional)
Serves 4
Spray your pan with Frylight and fry the beef cubes and onion until the meat is sealed and the onions are soft.
Stir in the curry powder and gently warm it through. Add the tins chopped tomatoes, stock cube, black onion seeds, garlic granules, dried chillis (if using), chopped fresh tomatoes, sliced mushrooms and the fresh chilli (if using).
Bring to the boil briefly and turn down to simmer, stirring occasionally until the meat is cooked through. Serve with brown rice.
For a milder curry, omit the fresh and dried chillis. Allow to cool slightly after cooking and stir though plain (unsweetened) fat free yoghurt.
