Velvet Quinoa

Ingredients
1 large beet diced1/2 cup frozen corn kernels1/2 cup frozen peas1 cup quinoa2 1/2 to 3 cups of vegetable brothsalt and pepper to taste1/2 tbsp powdered garlic (optional)
Directions
1. Boil diced beet on vegetable broth until beet chunks are tender.

2. Add quinoa, salt, pepper, and garlic powder. Cook until half of the liquid has evaporated then add corn and peas.

3. Once all water has evaporated, turn heat off.

Serve!!!
