Spaghetti with Red Lentil Sauce

Ingredients
2 tbsp olive oil1 cup chopped onions2 tsp minced garlic1 cup red lentils, rinsed 2 cups water or low sodium broth Salt & Fresh Ground Pepper 1 (28 oz) can crushed tomatoes1/2 tsp dried basil1/4 tsp dried oregano 1/2 tsp red pepper flakes, to taste1 lb spaghetti (use Dreamland or Smart Taste)
Directions
1. Boil pasta water in a large covered pot. When water comes to a boil add the spaghetti noodles. Cook, stirring occasionally until it is al dente, about 10 minutes. Drain well.
2. Heat Oil in a saucepan over medium heat. Add onions and garlic and cook until softened 5 minutes. Stir in the lentils, 2 cups water/broth and salt to taste. Cover & cook until tender, 15 minutes.
3. Add the tomatoes, basil, oregano, and red pepper flakes and season with pepper. Simmer, uncovered, over low heat 6 to 8 minutes.
4. Place cooked pasta in a shallow dish and spoon sauce on top.

    This was very good and filling. It did take longer than 15 minutes for the lentil sauce to cook. But worth the wait. - 8/12/14
