Brown Rice, red pepper, mushroom risotto

Ingredients
2 T olive oil1 cup uncooked brown rice1 cup vegetable broth and three cups water1 chopped red pepper1/2 chopped vidalia onion1/2 cup spinach1 cup parmesan cheese
Directions
Sautee rice in 1 T olive oil until translucent. Meanwhile, combine broth and water in saucepan and bring to a boil. Add broth half a cup at a time to the rice, stirring constantly, until absorbed.

Sautee pepper and onion in 1 T olive oil until tender. Add vegetables and cheese to rice and stir until combined. Serves four.
