2 cups sliced fresh mushrooms3/4 cup roasted red pappers1/2 cup chopped onion1 tsp. garlic2 Tbsp. butter3/4 cup instant potato flakes3/4 tsp. salt1/2 tsp. dried thyme , crushed1/4 tsp. ground pepper2 cups fat free milk4 cups fresh spinach chopped2 cups cooked brown rice2 cups chopped turkey1/2 cup finely shredded Parmesan cheese
1. Preheat oven to 350 F. In 12-inch skillet, cook and stir mushrooms, pepper, onion, and garlic in hot butter over medium heat until tender.
2. Stir in instant potato flakes, salt, thyme, and black pepper. Slowly stir in milk. Cook and stir until thickened and bubbly. Stir in Spinach, rice, turkey, and 1/4 cup of the parmesan cheese.
3. Spoon into 2-quart rectangular baking dish. Sprinkle with remaining Parmesan cheese. Cover and bake for 20 minutes. Uncover and bkae about 10 minutes more or until heated through. Let stand for 15 minutes before serving.
