4 tbn olive oil2 small onions1 head garlic1 1/4 lb eggplant1 lb carrots0.5 lb green beans4 tbn curry powder1 green pepper1 6oz can tomato paste1 10.75 can chicken broth
Directions
brown onions, garlic, and curry powder in oil. add tomato paste and broth. Add veggies. Salt, pepper, to taste. Add more broth, veggie cooking water, or water, as required. Simmer till tender. Makes
