1 1/2 T. olive oil1 t. tomato paste2 anchovy fillets1 qt. chicken broth1 c. Barilla cheese and spinach tortellini 1 can cannelini beans, drained and washed2 c. packed, rough-chopped baby spinach1 can diced tomato2 hot Italian sausages, chopped up1 clove chopped garlic1 chopped shallot2/3 c. roasted red peppergrated Italian cheese (parmesan, romano, or asiago)
Heat olive oil, add anchovy, tomato paste, shallot, garlic. Saute for 2 minutes. Add sausage and broth, and bring to a boil. Add tortellini and boil for 10 minutes to cook the pasta. Reduce heat to medium, add diced tomatoes, cannelini beans, roasted red pepper, and spinach. Simmer for 5 minutes. Serve with grated Italian cheese.
