Whole wheat bread

Ingredients
2 heaping tsp yeast1 1/4 cups hot water3-4 cups whole wheat flour (freshly ground is sooo delicious!)1/4 cup buttermilk3 TBS olive oil3 TBS honey1 tsp salt1.5 TBS vital wheat gluten (optional)
Directions
Makes one loaf of bread.

Mix hot water, 1 cup flour, and yeast together. Stir and allow to sit for 10 minutes.

Add buttermilk, oil, honey, salt and gluten. Stir. Add flour, 1 cup at a time, until dough clears sides of bowl when stirred.

Knead on oiled counterop or in mixer with dough hooks for 10-15 minutes (8-10 if using mixer).

Cover and allow to rise until doubled in size.

Knead a little to remove air. Shape into loaf and place in 9 inch greased bread pan. Allow to rise, covered, until doubled in size.

Bake in 350 degree oven for 30-35 minutes (until instant read thermometer reads 200 degress in center).

Remove from oven and pan and allow to cool.

Cut into 16 slices.
