Lasagna Florentine

Ingredients
6 lasagna noodles1 lb ground turkey, browned2 cups shredded mozzarella2 packages frozen spinach, cooked2 cups nonfat cottage cheese2 large eggs4 cloves garlic, minced (optional)26-oz jar pasta sauce1/3 cup grated parmesan2 slices whole wheat breadany other veggies you would like to add - some suggestions include: olives, sweet peppers, onion, mushrooms (this will change nutritional values)
Directions
Makes 8 servings

1. Brown meat in a frying pan and drain

2. Boil noodles and drain

3. Combine the meat, eggs, cottage cheese and spinach, garlic, and veggies a large bowl and mix well

4. In a greased pan, layer noodles, sauce, meat mixture and cheese, repeat

5. Top with toast, cut into squares and parmesan.

6. Baked, covered at 350 for 35 minutes

7. Uncover and bake and additional 10 minutes or until heated through.

8. Cool and serve.
