Low Fat Pumpkin Bread

Ingredients
2 2/3 c. Libby's pumpkin pie mix1 2/3 c. sugar4 eggs2 tsp baking soda1 tsp salt1 tsp ground cinnamon1/2 tsp baking powder1/2 tsp ground clovesOptional items (not included in calorie count):1/2 c. coarsely chopped nuts1/2 c. raisins if desired
Directions
Mix all dry ingredients together then fold in wet ingredients and blend until well incorporated, making sure not to over mix. I baked this in a 9" x 13" x 2" baking dish for about 1hr 5 min. at 350 degrees.

This tastes great on it's own but if you wish you could sprinkle with a little powdered sugar or ice it with cream cheese frosting.
