Baked Mixed vegetables

Ingredients
2 cups shredded cabbage1 small potato1 cup frozen peas & carrots1 tbsp olive oilsalt to taste and whatever spices you desire
Directions
MIx all ingredients together to coat all veggies with oil and spices. Spread on a on a baking tray. Cover with foil and cook at 450 for 30 min. ( I use my toaster oven - cooking tim will probably vary with larger ovens). Cabbage should remain crunchy.

You could also use any combination of veggies for this.
