Sweet Potato Custard

Ingredients
1 can evaporated milk, (13 oz) 1/2 Tbsp ground ginger2 Eggs 12 tsp Splenda Brown Sugar Blend2 cups sweet potato, canned, drained, rinsed
Directions
Preheat oven to 350 degrees.
Mix all ingredients and cook in water bath 45-60 minutes or until knife comes out clean.

I put a 6x9 pan inside a 9x13 pan, then fill 9x13 pan half way with water.
