Ingredients
8 corn tortillas1 c diced onions2.25 oz can sliced black olives4 oz diced green chiles10 oz enchilada sauce2 c low fat cottage cheese2 c low fat cheese
Directions
Pour half of the enchilada sauce in a a pan. Put 4 tortillas down. Combine the onions, chiles, cottage cheese and 1 c of the cheddar cheese in a bowl. Layer the cheese mixture, then 4 more tortillas, the other half of the enchilada sauce, the olives and the remaining 1 c of cheese. Bake for 40 minutes.
