Ingredients
2 large cans, or 6 cups of Yellow Cling. Peaches in Heavy Syrup - drained, reserving 2 Cups of the Syrup. 3 1/2 lbs. of fryer chicken or boneless chicken Breast, no skin, cut in strips. 1-2 Green Peppers (bell peppers), 1.5 cups, cut into strips1 large Onions, raw, quartered and separated into layers. May cut into thin strips if preferred.2 Tbsp. Cornstarch. 3 Tbsp. Soy Sauce. 6 Tbsp. of Vinegar.3 large or 4 medium Red Ripe whole Tomatoes, cut into 8ths.Cooking oil.
Directions
Brown the chicken in oil; cover and cook until tender in large frying pan or electric skillet until tender. Drain off any excess fat. Add the onion and green pepper strips and cook until the onion is transparent.
Drain the peach slices and set aside, saving the syrup.. Use 2 Cups of the reserved syrup to stir together with the cornstarch, soy sauce and vinegar. Break up any clumps, and stir until fairly smooth. Pur over the chicken, and cook until the sauce looks clear and slightly thickened. Add the peach slices and tomatoes, and Cover again. Heat 5 minutes, stirring lightly.
Serve over rice (not included in the calorie/nutrition count.)

    TO make healthier and decr calories...use peaches in light syrup, skinless chicken breast, and cook in skillet w/ either pam spray or chicken broth rather than frying in oil! - 12/28/10

    I used the peaches in light syrup as suggested in another review and used 2 chicken breasts. It made alot of sauce so next time I think I will use a smaller can of peaches and 1/2 the sauce amount. other then that it was very tasty and my picky 5 year old liked it too! - 1/17/11
