Tortilla Soup

Ingredients
2 cans of Rotel2 cans of low sodium chicken broth1 can of corn1 large can of cooked chicken (approx 2 cups)Optional:1 can of low fat/no fat refried beansCheese for toppingSour cream for topping
Directions
Combine rotel, corn and chicken broth in sauce pan. Bring to a boil over medium heat. Add chicken (and optional refried beans). Reduce heat to low and simmer for an additional 5 minutes or until chicken and beans are heated through. Top with shredded cheese and sour cream *optional*.

Yields 4-6 servings.
