Apple Oatmeal Raisin Nut Muffins

Ingredients
1 1/2 cups whole wheat flour1 1/2 cups instant oats1 tsp cinnamon1 tsp baking powder3/4 tsp baking sodapinch of salt1/4 cup ground flax1 cup applesauce3/4 cup skim milk1/4 cup sugar2 tbsp oil1 egg2 cups finely chopped apple1/2 cup chopped walnuts1/4 cup raisins
Directions
Preheat oven to 400F. Spray muffin pan with cooking spray. Mix dry ingredients in medium bowl. Mix remaining ingredients in large bowl (except apples, raisins, walnuts). Mix dry ingredients into wet. Mix in apples, raisins and walnuts. Batter should be lumpy. Fill muffins cup 2/3 full with batter (I use a large ice cream scoop for equal portions). Bake for 20 minutes or until golden brown.
