Poppyseed Muffins

Ingredients
1/4 c. soy Flour, stirred 1/4 c. white Flour3 Tbsp Granulated Sugar4 tbsp Egg Beaters (or 1 egg)2 Tbsp water3 Tbsp Applesauce, unsweetened1 tbsp Poppy seed,1 tsp grated Lemon Peel1 1/2 tsp Baking Powder
Directions
Makes a half dozen with the listed ingredients. Just double for a full dozen. Serving info is per muffin.
Mix dry ingredients together. Blend wet ingredients then add all at once to dry. Mix until just blended. Bake at 375F in greased muffin tins (6-cup tin), 15-20 minutes. Cool on rack.
