Mama's Meatloaf

Ingredients
1 can stewed tomatoes with green chilies1 pound lean ground beef1/2 cup egg substitute1 cup old fashioned oats
Directions
Preheat oven to 350. Using food processor or blender, process tomatoes for about 5 - 10 seconds to puree. In mixing bowl, combine all ingredients. Season to taste with a salt substitute and pepper.

Pack meat mixture in a sprayed loaf pan.

Bake 1 1/2 hours or until meat is thoroughly cooked. Drain fat from loaf pan 1 or 2 times while cooking.

Recipe makes 6 servings about 1 inch think.
