Curried Lentils

Ingredients
Curry Paste Ingredients:3 tbsp each of garlic, cumin, and coriander seed2 tsp each of turmeric, ginger, paprika, and chili powder1 tsp sea salt3 tbsp white vinegarCurried Lentils Ingredients:3 cups dried lentils3 cups chicken broth1 can coconut milk1 can diced tomatoes6 tbsp curry pastesalt to taste
Directions
For curry paste, combine all dry ingredients thoroughly; then add vinegar. Store in fridge until used (up to 3 months)

For curry, rinse lentils and boil in chicken stock, then cover, and simmer over low heat for 15 minutes. Stir in the curry paste and coconut milk. Return to a simmer, and cook for an additional 10 minutes, until tender.
