1 lb Ground Turkey Sausage (Mild)1 large onion2 tsp salt1/2 tsp pepper1 tsp dried basil6 cups fat free chicken broth1 15-oz can whole corn, drained4 cups left over mashed potatoes or substitute 3 large potatoes, peeled and cubed.
Brown sausage with chopped onion, drain off fat.
In a large soup pot, add chicken broth, salt, pepper, basil and mashed potatoes or cubed potatoes. If using cubed potatoes, cook until the potatoes are tender.
Add sausage and onion.
Simmer for 15 minutes over medium heat. Add corn, stir and heat through.
