Apple Flax Pancakes

1 1/4 cups whole wheat flour1/3 cup coarsely ground flaxseed1/8 cup SPLENDA� Sugar Blend1 tablespoon baking powder1/2 teaspoon salt (optional)1/4 teaspoon cinnamonDash of nutmeg2 eggs, separated1 1/4 cups skim (nonfat) milk1 tablespoon canola oil1 cup pared and shredded apple (shred just prior to adding to batter)
1. In large bowl, combine flour, ground flaxseed, sugar, baking powder, salt, cinnamon, and nutmeg.
2. In medium bowl, lightly beat together egg yolks, milk, and oil.
3. In a separate bowl, beat egg whites until stiff peaks form.
4. Add egg yolk mixture to the dry mixture and stir until just combined.
5. Shred apple and add to batter.
6. Fold in egg whites.
7. Preheat griddle; spray with nonstick cooking spray.
8. Pour 1/3 cup batter for each pancake and cook until bubbles appear, about one minute. Turn and brown.
Makes 12 pancakes, two per serving.
