Sauteed Spinach & Garlic

Ingredients
4 cups fresh spinach, rinsed & drained1 T olive oil1 garlic clove, mincedsalt & pepper to tastelemon
Directions
Heat oil in pan. Add garlic & saute for 30 seconds or just fragrant. Add spinach & flip with tongs until it fits in pan. Put lid on pan & cook a few minutes until spinach is fully wilted. Take lid off & continue to cook until excess water is cooked off. Add salt & pepper to taste. Squeeze one half a lemon over spinach & stir.

    This was a perfect accompaniment to the Baked Chicken with Garlic and Sun Dried Tomatoes (Chef Meg's Makeover) recipe on this site!! I mixed both recipes together and sprinkled a little parmesan cheese over it. I served it over a half cup of pasta as I had a few extra calories that day. :) - 2/1/11

    this is one of my favorite ways to cook and serve spinach. The only thing I do differently is to toss a large, whole clove of garlic and heat long enough to infuse the oil with flavor. Healthy and delicious! Thanks. - 7/26/08
