Renee's Curried Chick peas

Ingredients
2 cups of Chick Peas0.5 cup of coconut milk2 tbsp of yellow curry powder (mild) 1/4 red onion1/4 green bell pepper1/2 yellow squash ( chopped)1-2 cloves of garlic2 plum tomatoes0.5 cup of H2O1-2 Tbsp of Olive oil
Directions
Cut veggies and cook in olive oil. add garlic and curry powder . Cook for about 5-6 minutes and then add coconut milk and water . Stir and bring to a low boil. Cook for about 10 minutes and then add tomatoes.

Serve alone with steamed broccoli or add some brown rice . Serves 4-6 .
