Maple Cream Fudge

2 cups white sugar1 cup maple syrup (100%)1/2 cup cream2 tbsp cream1/4 tsp salt1/2 tsp pure vanilla extract1 cup walnut pieces
1. Put sugar, maple syrup, and cream in a medium pot. Boil to 238 degrees, stirring occasionally to prevent scorching.
2. Pour hot mixture into a clean bowl without scraping the sides of the pot. Let cool undisturbed to under 110 degrees. Put butter on top while cooling.
3. Add salt and vanilla. Beat until creamy... hard to stir. Add nut meats, mix well. Press into a waxed paper lined 8 x 8 pan and cut into 5x7 squares.

It was wonderful!! Although I think there is an error in the ingredients: the 2 T. cream should probably be 2 T. butter since butter is referenced in the directions but not the list of ingredients. The power went out when I made it, so I missed how long to beat it. Lesson:read entire recipe first! - 6/30/11
